Salsa Verde Chicken Thighs

This does not get any EASIER or macro friendly. .Unless of course you sub chicken breast for the chicken thighs….but there is only so much I can take. This recipe is not to show case any special skills . This recipe is ONLY to provide simple, fast, cheap, delicious meal ideas that fit your macros and wont make your family hate you. IIFYM…..IYKYK

Ingredients
  

  • 4 Chicken Thighs
  • 1 Bottle/Jar Salsa Verde (green salsa) any kind you like or is cheap
  • 1 Clove Garlic minced/chopped/whatever
  • 1 Onion Onion optional (low fodmap omit)

Instructions
 

  • I'm ashamed I even took the time to do a blog post about this. It literally took longer than it takes to make this meal
  • Grill chicken thighs (or Instant Pot, slow cook, air fry, bake) pick your poison. I air-fried them and grilled them and both were delicious
  • Saute onions if using for a few minutes in pan over medium heat, add garlic and sautee for one minute
  • Add salsa verde to onions and garlic over medium heat
  • Cut chicken into slices if grilled or air-fried (if slow-cooked or Instant Pot'ted shred). Simmer or stir in the salsa
  • Let simmer or keep warm for about 10 minutes
  • TADA….seriously that's it. I know it seems simple but I have been counting macros for about 5 years and never thought of it and have really been enjoying it
  • I serve with cilantro lime cauliflower rice, rice rice, or quinoa
