Biscuits & Gravy Casserole

I’m going to blame growing up in Indiana for the reason I think that Biscuits & Gravy is more of a religion than a meal. I didn’t even grow up eating this meal…the times my mom or dad made this at home for me growing up is at a ZERO. Buuuuuut if you are raised in the midwest sooner or later, this meal WILL FIND YOU, and thank the sweet baby Jesus it found me. We used to go to brunch every Sunday and order B&G alongside whatever else it was that we were getting. Since the pandemic lockdown, we don’t eat breakfast out much anymore (or any meal for that matter), but if we do, you BEST BELIEVE it includes a side of biscuits and gravy! I also usually never make B& G it at home because milk hates me, and so does gluten which are the main ingredients to this amazing dish, but last week after a month of my husband constantly talking about a “big country breakfast ” (we still don’t know what this means or where it even came from because we have never actually had anything called a big country breakfast….) I decided to try and make sausage gravy with oat milk and it was DELICIOUS! Of course, we didn’t eat it all, and with food prices what they are, I can NOT throw out food, so I decided to throw together this casserole. I had absolutely zero hope of it turning out or even being worth the calories it would cost to consume it….but it totally exceeded our expectations! It’s SO easy, the perfect Sunday morning meal, and a perfect way to use those leftover biscuits and gravy you would normally just throw away!

Biscuits and Gravy Casserole

Ingredients
  

  • 4 Left Over Biscuits
  • 6 Whisked Eggs
  • 4 Pieces Bacon
  • 1/2 Cup Shredded Cheese
  • Left Over Sausage Gravy

Instructions
 

  • Break up leftover biscuits and place in the bottom of greased or parchment-lined baking dish ( I used an 8×8 glass pan)
  • Whisk 6 eggs and add half of the cheese to the eggs and pour over biscuits. Tilt pan if necessary to evenly distribute eggs over biscuits
  • Tear up leftover bacon and evenly place on top of egg mixture
  • Spread sausage gravy over bacon to cover
  • Top with the rest of the shredded cheese
  • Bake on 350 degrees for 40-45 minutes until eggs are total set
  • ENJOY!
