Oatmeal Cake Bake

We LOVE this recipe. A new go-to easy brunch staple in our house. I "borrowed" this recipe from CT. By borrowed I mean I made it gluten free, dairy free, cut it in half, and changed the suggested fruit. Does that make it mine?!

Ingredients
  

  • 1 Cup Rolled Oats Gluten Free
  • 2.5 Cups Oat Milk or Milk of choice
  • 2 Eggs
  • 2 Ounces Butter (softened) We use dairy free
  • 1 Cup Yellow Cake Mix We use Gluten Free

Instructions
 

  • Mix and stir oats and milk together in microwave safe bowl or small sauce pan
  • Put in Microwave for 5-6 min or stir over medium heat for 7-8 min
  • Removed from heat. Let oats cool for 10 min
  • Preheat oven to 350
  • Beat eggs and add with butter and dash of salt to oatmeal. Mix thoroughly
  • Stir in cake mix till incorporated
  • Grease 9×5 loaf pan and pour in oatmeal mixture
  • Top with berries or fruit of your choosing. We use frozen strawberries, raspberries, and blueberries
  • Bake for 30-40 minutes till center has "set" but still jiggles.
  • LET COOL!!!! It is HOT when it comes out of the oven
  • ENJOY!!! We eat this right out of the pan with spoons!
