Oatmeal Cake Bake

We LOVE this recipe. A new go-to easy brunch staple in our house. I "borrowed" this recipe from CT. By borrowed I mean I made it gluten free, dairy free, cut it in half, and changed the suggested fruit. Does that make it mine?!

Ingredients
  

  • 1 Cup Rolled Oats Gluten Free
  • 2.5 Cups Oat Milk or Milk of choice
  • 2 Eggs
  • 2 Ounces Butter (softened) We use dairy free
  • 1 Cup Yellow Cake Mix We use Gluten Free

Method
 

  1. Mix and stir oats and milk together in microwave safe bowl or small sauce pan
  2. Put in Microwave for 5-6 min or stir over medium heat for 7-8 min
  3. Removed from heat. Let oats cool for 10 min
  4. Preheat oven to 350
  5. Beat eggs and add with butter and dash of salt to oatmeal. Mix thoroughly
  6. Stir in cake mix till incorporated
  7. Grease 9x5 loaf pan and pour in oatmeal mixture
  8. Top with berries or fruit of your choosing. We use frozen strawberries, raspberries, and blueberries
  9. Bake for 30-40 minutes till center has "set" but still jiggles.
  10. LET COOL!!!! It is HOT when it comes out of the oven
  11. ENJOY!!! We eat this right out of the pan with spoons!
