I was 39 years old when I found out I liked…no LOVED white chocolate. I have no idea what possessed me (other than straight boredom) to make this for my husband a couple of years ago and now it is the only thing he requests for every single holiday. I just hand-sorted all the Christmas M&M’s to get all the green ones out cause he asked “is St. Patrick’s Day a good enough holiday to ask for my mix”.
This stuff is super EASY to make, is GLUTEN-FREE (but doesn’t have to be), and I don’t know too many people who won’t mindlessly sit in front of it and shovel it into their pie holes till they can’t no mo. I’m sure you have seen a bunch of different versions of this. I like to keep it simple. Yes, I love bunny-shaped marshmallows, cheerios, and all the other things people add to this stuff buuuuut sometimes I think less is more. There is no need to add all those extra calories to this. By the time I get to ours, I’ll have already taken down half my Easter candy. I also don’t know about you but it’s anything just short of a miracle if my grocery store has all the things I actually need for a recipe, so the fewer ingredients I need…the better. Anyway, add what you want. We don’t always use peanut butter M&M’s but the egg shape is fun. If you don’t like them, just use regular or whatever else you fancy. If you are really feeling sassy, I like to add a tiny bit of food coloring to make it even more festive but it is absolutely unnecessary, and if you don’t already have it for coloring eggs…SKIP IT.
NOTES
- If you are using the microwave and not the stovetop like me, follow the instructions as directed on the bag. I know nothing about microwave times. I gave mine up about 6 years ago. DO NOT PUT A METAL BOWL IN YOUR MICROWAVE. I do remember that part.
- Don’t let the water boil under the chocolate. I keep my burner between 4 and 6 the entire time and if I hear it try to boil I turn it down.
- Don’t use mini M&M’s I made the mistake of using them for my last holiday and the hot chocolate melted those little dudes.
- If you are using sprinkles add them right after you spread the mix out to cool. It won’t stick to the chocolate later.
- If you are making this be GF make sure you check your white chocolate bag to verify. The one I use is processed in a facility that has wheat but I am not so sensitive that cross-contamination affects me.
Easter White Chocolate Chex Mix
Equipment
- 1 Sauce Pan
- 1 Metal Bowl Or microwave safe bowl if using a microwave
- 1 Large Mixing Bowl
- 1 Spatula or Mixing Spoon
- 1 Wax Paper or Parchment Paper
Ingredients
- 1 Box Rice Chex
- 1 Bag Gluten Fee Pretzels
- 1 Bag Easter Peanut Butter M&M's
- 1 Bag White Chocolate Chips
Instructions
- Open all the dry ingredients (Chex, pretzels, and M&M's) and throw them all together in a large mixing bowl. I only use about 3/4 box of the Chex/pretzels)
- Fill smaller sauce pan 2/3 full of water and place over medium heat. Place metal pan on top of sauce pan with water. Add bag of white chocolate chips.
- Let chocolate melt over medium heat making sure not to let the water boil which could cause the chocolate to seize. Use spatula to stir chocolate evenly while it melts. Stir till smooth.
- Pour melted chocolate over dry ingredients in large mixing bowl.
- Mix well to coat. Don't worry about some of the Chex breaking.
- Turn coated mixture out onto wax paper and let chocolate set. Sprinkle with festive Easter sprinkles and ENJOY!!!
