Date Night One-Pot Clam and Shrimp Linguine
Easy, Simple, Fancy AF Protein Packed Pasta?! Can I get an AMEN!! My husband hates pasta and even loves this dish.
Ingredients
- 1 lb Shrimp I use peeled and deveined frozen shrimp
- 2 lbs Clams I use frozen
- 5 oz Linguine Rice Noodles
- 1 cup White Wine any kind… I use whatever we have
- 1 tsp Red Pepper Flakes adjust this to your taste but dont omit!!
- 2 Cloves Garlic minced/chopped
- 1 tbsp olive oil
- 2 tbsp Butter we use diary-free
- 1 splash milk/cream optional
- 1 Lemon optional but extra FANCY
- 1 Parsley optional but extra FANCY
- 1 whole Shallot / onion if using onion 1/4 onion
Instructions
- Prep, prep, prep, prep. Cut up garlic and parsley, set aside. Put clams in bowl of water and TRUST ME scrub/soak to get grit out. Drink some wine!!!
- Boil Rice Noodles (or any gluten free or regular) as package directs. Rinse with cold water and set aside.
- Heat just enough olive oil over medium high-ish heat to sautee shallot. Sautee for a couple minutes just to heat up.
- Add garlic and red pepper flakes. Sautee a minute or two till garlic THINKS it might turn brown
- Add cup of wine, clams, and shrimp. It should be steaming and boiling COVER POT
- Check in a couple few minutes. I cant leave anything alone so I do this about every 2 minutes.
- When Clams are all open and shrimp is pink add butter and noodles to the pot
- Stir carefully to combine and cover for 2-3 min again
- Remove lid, let still cook add splash of cream. Stir to incorporate
- This will still look soupy and it might stay that way. Dont worry its still delicious.
- Turn off heat and let sit for a couple while you top with lemon juice if wanted and parsely
- Top with grated parmesean cheese and serve with a bake french loaf…..YUMMMMY
