Steak, Spinach, and Cheese Pinwheels

Add these to the list of things that have evaded me until recently. THANK YOU FOOD TOK!!! We don’t eat a lot of steak at my house. My husband thinks it’s “chewy” and I only usually like super-thin cuts a couple of times a year. Imagine my own surprise when I was mindlessly scrolling Food Tok and came across steak, spinach, and cheese pinwheels and could NOT stop thinking about them. I literally did everything wrong and not like the recipe instructed but they turned out SO DELICIOUS and we love them. They are perfect for entertaining, at-home date-night, brunch, food prepped meals, macro counting, you NAME IT. I serve these with air fryer parmesan fries and prosecco.

Pro-Tip

  1. Watch a Youtube video about how to butterfly a flank steak if you don’t know how to already. I didn’t know how…I botched it up, there were holes everywhere, and it still worked out just fine so don’t panic if it’s not perfect. It will work I PROMISE.
  2. The cheese can be parmesan or asiago. I have used both and both were delicious.
  3. Use fresh spinach. I’m sure that frozen would work but it’s usually a little soggy and doesn’t cook long enough to solve that problem.
  4. Don’t over-salt your steak. The cheese is pretty salty on its own. You can always add salt later.
  5. Do NOT cook this without cutting it into the pinwheels. I’m speaking from experience here. I was like why make a mess when I can just cut it after it’s done. This was misguided and obviously, the middle didn’t cook at all.
  6. Tie the steak rolls as opposed to skewers. I bought skewers… I tried to make it work and it just didn’t. I had to pull the rolls off the grill tie them up and remove the skewers. I’m sure if you are better at skewers than I am it would be fine….just letting you know mine was a failed experiment. We just use twine my husband had in his toolbox. That’s a true story….just soak it first so it doesn’t go up in flames.
  7. If you don’t have a grill most videos I watched cooked this in a pan on the stove and they looked amazing….I just prefer the grill ALWAYS.

Steak and Cheese Pinwheels

  • Soaked String

Ingredients
  

  • 1 Flank Steak (Butterflied) ours comes pre-packaged from the store anywhere between 1.5-2.5 Lbs. Adjust other ingredients accordingly
  • 2 Cups Fresh Spinach
  • 1 Cup Shredded Parmesan Cheese (Asiago is good too)
  • 1 Dash Salt

Instructions
 

  • Take one flank steak from the store and butterfly it
  • Lightly salt steak once butterflied
  • Layer shredded cheese all over steak using desired amount leaving an inch border around steak to be rolled
  • Top shredded cheese with fresh spinach
  • Roll that dude up till it looks like this. Stuff will be falling out of it….thats OKAY
  • Cut steak into at least 4 pieces. Thinner for appetizers or more people
  • Spray with cooking oil, place carefully on preheated grill about 400 degrees, and cook to your desired temp flipping once halfway done. We cook ours for about 6 min a side
  • Pull off of grill. Remove strings or skewers and ENJOY
