I was 40 years old before I had a corned beef brisket. WHYYYYYY?!!! I 👏🏻DO 👏🏻NOT👏🏻 KNOWWWW👏🏻. My 23andMe assures me that I’m Irish, which aligns with what my sweet Granny told me, so I feel ashamed about this. Place this on the list of things the pandemic brought into my life that I normally would not have tried if I was just out and about in the world only hunting for green beers.
Pro-Tips:
- If you have a grill throw this on there first. You don’t have too but I do this to almost all meat I make in the Instant Pot. It takes a total of 5 min, I see grill marks so it makes me happy inside. I get that charred taste of the grill but the tender taste of the pressure cooker. TRUST ME.
- Use a dark beer. I buy Guinness beer cause I always want a drink of one but never want to finish one and love how it tastes in this receipe BUUUUUT I have used another dark beer and it was just as good. I just don’t see a light beer giving you the rich taste from this you will want.
- Don’t forget the seasoning packet that comes with the corned beef. I have had to stop the Instant Pot more than once because I have forgotten it and it really does add something that you will miss if you dont do it.
- Cut this thing once its done on a rimmed plate or baking sheet. There is nothing like eating a declious meal and hearing drips on the floor and having to stop and clean up your entire kitchen and your dog who is now under the meat juice waterfall having the time of her life.
Instant Pot Corn Beef Cabbage
The easiest and I mean the EASIEST way to make corn beef for St. Paddy's day or any other.
Equipment
- 1 Instant Pot
Ingredients
- 1 Corned Beef Brisket
- 1 can Guinness or darker beer
Instructions
- Turn your grill on and wait till it has reached 400
- Remove corned beef from packaging and set seasoning packet aside
- Throw corned beef on the grill once its reached 400 for about 5 minutes. Flip over and let cook another 5 or so minutes till the grill marks reached your desired look
- Pour full Guinness beer into Instant Pot and place trivet on bottom of the Instant Pot (*I don't think this is probably necessary, but we like it out of the the juices…. but I bet it would taste the same with out it if you dont have a trivet)
- Carefully remove corned beef from the grill, and place on trivet in Instant Pot with tongs. Open seasoning packet and pour over top of corned beef.
- Close Instant Pot and seal. Set on high pressure for 90 minutes. I always turn off "keep warm"
- Let cook the full 90 minutes and naturally release….which just means to let all the pressure leave the Instant Pot with out manually releaseing the valve
- Remove corned beef with tongs and slice. Pro tip…do this on a rimmed plate or baking sheet with a lip so the juices do not cover your kitchen counter making for an awesome mess.
- Serve with grilled cabbage and air fryer fries for food coma heaven
