Super Simple Holiday White Chocolate Peppermint Pretzel Thins

I could 💯 eat my body weight in these, and that is no lie. I spent the first 39 years of my life falsely believing that I didn’t like white chocolate. In fact, the only reason after 40 YEARS of actively refusing even to try anything that was white chocolate was broken only because the nicest lady that I worked with gave my entire office Christmas holiday goodies and literally insisted I try these white chocolate peppermint pretzels while she stood there. Imagine my surprise when they were the MOST DELICIOUS holiday treat I had ever tried. I then spent the next two years buying these in bulk from Trader Joe’s and Costco when they came out at Christmas time until my stomach who just can no longer tolerate gluten pretzels, wouldn’t let me enjoy them like I wanted to anymore. I tried and tried to find them gluten-free, and I just never ran across them until I realized it would probably take about 3 seconds to make these at home…..and I was RIGHT. These are SIMPLE, will save you about a million dollars if this is an addiction like I have, and you don’t have to wait until December every year to enjoy them!

Stephanie’s Pro Tips:

  • Do not use the tiny GF pretzels unless you plan on them just being an actual cluster. They are hard to separate and don’t give you the same dopamine happiness.
  • I only melt my chocolate in a double broiler because I don’t have a microwave. Follow the chocolate package instructions if you want to use yours instead of the stovetop method.
  • Store these in an air-tight container as soon as you can after the chocolate hardens, if not, your peppermint candy will go stale, and it is such a bummer when you want one and the candy is no longer crunchy but just sticks to your teeth.

White Chocolate Peppermint Pretzels

Ingredients
  

  • 1 Bag Gluten-Free Pretzel Thins
  • 1 Bag White Chocolate Chips or Candy Melts
  • 1/2 tsp Refined Coconut Oil
  • 4-5 drops Peppermint Extract
  • Smashed Candy Canes

Instructions
 

  • Melt white chocolate in a metal bowl over a double broiler
  • Add coconut oil to thin out the melted chocolate
  • Add peppermint extract and mix well
  • Use a fork and dip pretzels one by one in chocolate OR pour chocolate over bowl full of pretzels and mix till all covered and pour out onto wax paper
  • Top chocolate-covered pretzels with peppermint candy IMMEDIATELY
  • Let cool!
  • Enjoy!
